The Name

Most cultures have some form of a beans and rice dish. However, in Louisiana, the dish was traditionally slow cooked on Mondays as it was laundry day. Slowly simmering on a stove for hours, red beans and rice was a meal that required little work but if done right, you’d think someone “stood over the stove’ all day. The dish has a base of the sautéed holy trinity (onions, bell peppers, and celery) with smoked pork or sausage. Nowadays, few wait until Monday for this delicious Louisiana staple.
